Storing Your Coffee
We recommend storing coffee in the freezer for storage longer than one week. We believe that there is too much moisture in the refrigerator and many odors can seep into your coffeeThe Water
It is best to use bottled drinking water or filtered water. This should prevent any off-taste that may occur. If you are using an open cone filter, the water should be around 195 degrees Fahrenheit for best extraction. This can be accomplished by bringing the water to a boil and then letting it set for about 30 seconds before pouring over the ground coffee.
The Grind
The grind is also very important in obtaining the most delicious cup of coffee. Too fine a grind will cause over extraction and bitterness; too coarse a grind will cause under extraction and a weak, unflavorful coffee. The range is from a fine, powder-like grind for espresso to a coarse grind for a French Press or electric perk. Most auto-drip makers with flat bottom filters use a medium grind. We suggest that you use the grind recommended for your coffee maker.
